– 2 rectangular sheets of puff pastry
– Sugar icing
– For the cream
– 1 litre milk
– The skin of 1/2 lemon
– 2 cinnamon twigs
– 200g sugar
– 75g flour
– 1 egg and 7 yolks
– 30g butter
– Sugar icing for garnish
PREPARATION OF PASTRY CREAM CANOLIS:
1 – Bring the milk with the cinnamon to a boil. When boiling, remove and let infuse. Mix the sugar with the flour, bathe with a little warm milk, mix well and add the yolks and egg.
2 – Stir this mixture into the milk and boil for 10 minutes, stirring, until thickened.
3 – Leave to cool in a bowl and place the butter forming a layer on top. Spread the puff pastry and cut it into long strips, which we will roll into a metal tube giving the shape to the reeds.
4 – Cook at 180o until golden brown, hot tube and fill with cold pastry cream. Sprinkle with icing sugar.
