
The SPINACH AND GOAT CHEESE FRITTATA. Here show you how to prepare a Frittata, an Italian omelette to which we can add lots of ingredients since it adapts to the taste of each one. In Italy, or at least that’s what the Italian cookbooks I have at home say, it’s very common to prepare the frittata as if it were a regular omelette, turning it over in the pan to make it on both sides. But perhaps frittata is world-renowned because you can also cook in the oven which allows us to add ingredients on top, as if it were a pizza, and gratin them in the oven.
Today we will see how to make a baked frittata to get the goat cheese that we add at the end is gratine and delicious!!
To make the recipe you will need a oven-safe pan (plastic handles are not worth melting). I used a wrought iron one that goes great to make Frittatas and Spanish healthy tortillas.
INGREDIENTS OF SPINACH AND GOAT CHEESE FRITTATA:
– 4 large eggs
– 1 small onion
– 1 piece red pepper
– 2 handfuls fresh spinach
– 4 slices goat cheese in curl
– 4 tablespoons olive oil
– Ground black pepper
– Fine salt
PREPARATION OF SPINACH AND GOAT CHEESE FRITTATA:
1 – Put 4 tablespoons of olive oil in a pan suitable for the oven and heat up.
2 – Add a small onion, finely sliced, a pinch of fine salt and let it poach slowly.
3 – When the onion is soft, add a piece of red pepper, cut into small squares, and leave on medium heat. We want to caramelize the onion little by little so that it gives a point of sweetness to the frittata that combines great with goat cheese.
4 – A while before the onion is in place, turn on the oven and set it to 200 degrees Celsius in heat up and down.
5 – When the onion is caramelized (very soft and somewhat brown) add the two handfuls of spinach and mix well.
6 – While the spinach softens in a bowl 4 eggs and add a pinch of fine salt and ground black pepper. Beat well and set aside.
7 – When the spinach is soft, pour the eggs into the pan and mix so that the eggs reach the bottom.
8 – Remove the pan from the heat and add 4 slices of goat cheese over the top.
9 – Place the pan on a rack in the center of the oven and bake for 10 minutes.
10 -If you like that goat cheese is gratin turn on the grill a couple of minutes before it finishes being frittata.
11 -When the healthy tortilla has curdled, carefully remove it from the oven (use a thick cloth or glove to protect you).
12 -Transfer the frittata to a plate and cut into two or four portions. And that’s it … out of the kitchen and to eat!!!
