– 1 sheet 285 g puff pastry
– a little icing sugar
– 500g apricots
– 250g sugar
– the juice of half a lemon.
PREPARATION OF PUFF PASTRY STICKS WITH APRICOT JAM:
1 – Preheat oven to 180o. Roll out the puff pastry and sprinkle a little icing sugar on top. Divide it in half, cut 28 strips about 2.5 cm each and roll them in two from the ends so that they take the form of small poles.
2 – Place on a baking sheet with sulphurized paper and bake for 15 minutes or until they start to brown.
PREPARATION OF JAM:
1 – Wash the apricots, split them in half and remove the bone. Put them in a saucepan with the sugar and lemon juice over a low heat and stir occasionally for about 30 minutes or until the fruit is undone and has a jam consistency.
2 – Pour the jam while still hot in sterilized glass jars and wait for it to cool down.
