INGREDIENTS:
– 1 sheet 285 g puff pastry
– 250g cherries
– 125g sugar
– 1 vanilla pod
PREPARATION OF CHERRY TARTLETS:
1 – To start, wash the cherries and remove the bones with a boneer. Cut the vanilla pod longitudinally and, with the tip of a knife, scrape the seeds and scoop them together with the sugar and cherries.
2 – Bring to the boil, lower the heat to a minimum and let it cook for 7 min. Move from time to time trying not to break the cherries.
3 – Meanwhile, preheat the oven to 180 degrees. Roll out the puff pastry sheet and set aside a 6 x 30 cm strip for tartlet decoration.
4 – Divide the rest of the sheet into 9 portions with a circular cutter approximately 8 cm in diameter, always make sure that the size is similar to that of the muffin pans in which the dough is to be baked.
5 – Cut the previously reserved puff pastry strip into smaller ones of 8 x 0.5 cm. Place the puff pastry circles in muffin tins, cut the candied cherries into small pieces, add a couple of tablespoons in each pan and arrange on each of them of them five strips of puff pastry drawing a grid.
6 – Bake for 15 minutes or until puff pastry starts to brown. Serve tartlets when they are still warm.
